2021 Columbia Valley Cabernet Sauvignon
The 2021 growing season across Washington State experienced the best of both worlds with a warm spring season and an early summer while rounding off with a milder fall season to finish with optimum ripeness. We experienced hot temperatures in June and July which paused development, however this extended our hang time into late Fall where we captured all of those beautiful ripe phenolic flavors and characteristics that come with patience. Overall, the 2021 growing season was quite a pleasure to work with and should be regarded an almost perfect growing year in the vineyards producing wines with ripeness and excellence.
Winemaker Notes
Our impression of this wine – Vibrant and deep garnet in the glass, dark and concentrated to the rim. This 2021 Cabernet has initial aromas of black currant, mocha, fresh forest floor, and mountain huckleberry. On the palate, this wine is full-bodied with velvety tannins, a touch of acidity, and elegant balance. The long, silky finish demonstrates the dance of power and finesse woven with dark fruits, minerals, and cedar spice. Please allow at least a 24 hour upright settle, this wine is unfiltered and unfined.
